Delicious, Delicious... Perfect Ice Cream Sandwich

For some reason tonight, I cannot stop dreaming of Ici's Meyer Lemon and Ginger Cookie Ice Cream Sandwich.

I use to get them at the Berkeley Farmer's Market when I would work from California... and it was one of the best treats I've ever consumed! I also love the foil wrapper and the small white sticker with cursive writing.

Now... how do I get them shipped to DC?!

If you are looking for an easy (and healthy) DIY ice cream sandwich, take some nila wafers and put a scoop of Haagen-Dazs chocolate sorbet in between two cookies. Make sure the sorbet is somewhat soft when you do this and put the sandwiches in the freezer for at least an hour. Yum!
