Oh Frolic is a legend - like something out of a Fitzgerald story. He is definitely post-worthy!Leah ~ the recipe is below and I found it using "My Friend's Recipes." Hope you enjoy! Oatmeal Souffle 1 cup milk 2 Tbsp butter 3/4 cup quick cooking oatmeal 1/3 cup cream cheese 1/4 tsp salt 1/2 cup dark brown sugar 1/4 to 1/2 tsp nutmeg 1/2 tsp ground cinnamon 3 large eggs, separated 1/2 cup chopped dates or raisins (optional) 1/2 cup chopped pecans or black walnuts preheat oven to 325 degrees f. butter and sugar a 1 1/2 quart souffle dish or casserole. put milk and butter into a small saucepan and heat until barely boiling. slowly add the oatmeal, stirring constantly. cook the oatmeal until thick, stirring often. remove from heat and add cream cheese, salt, sugar, nutmeg, and cinnamon. stir briskly to blend and smooth the mixture. beat egg whites until stiff. gently stir and fold the whites into the oatmeal mixture. don't overfold. spoon mixture into souffle dish. bake 35-40 min. or until the souffle is set. serve warm with milk.
